1 tbsp Black peppercorns
½ tbsp Olive oil
¼ tbsp Thyme
¼ cloves, minced Garlic
⅛ large Onion
³⁄₁₆ cup Chicken stock- ³⁄₁₆ cup 2% milk
¼ tsp Dijon mustard
¼ tbsp All-purpose flour
Directions
- 1
Season the steaks with salt and place them on a wire rack over a baking sheet. Refrigerate uncovered for 30 minutes to air-dry.
- 2
Crack the peppercorns using a pepper mill, mortar and pestle, or by crushing them in a towel with a mallet.

- 8
Serve the steaks with the sauce poured over the top.
