¾ tbsp Olive oil
5 oz Atlantic salmon- 🥄⅜ tsp Salt
⅛ tsp Black pepper
³⁄₁₆ cup Balsamic vinegar
½ medium Onion
¼ tbsp Butter
¼ tsp Granulated sugar
Directions
- 1
Heat one-third of the olive oil in a 12-inch nonstick skillet over medium heat until hot.
- 2
Pat the salmon fillets dry, sprinkle with two-thirds of the salt and pepper, then cook skin side up until the undersides form a golden crust, about 12 to 15 minutes. Turn the fish over and cook until just cooked through, about 3 minutes more.
- 3
Meanwhile, heat the remaining olive oil in a large skillet over medium-high heat until it shimmers. Cut the onions into small wedges, then sauté until golden brown and crisp-tender, about 6 to 8 minutes.
- 4
Stir in the balsamic vinegar, sugar, and remaining salt, and cook until the sauce is syrupy, about 2 minutes. Remove from heat and stir in the butter.
- 5
Spoon the onions with sauce onto plates and top with the salmon, skin side down.
