¾ cup White beans
½ cup Chicken broth- 🥄½ cup Water
2 oz Bacon
¼ large Carrots
¼ stalks, large (11 inches long) Celery
⅛ medium Onion- 🥄⅛ dash Salt
⅛ dash Black pepper
¼ tbsp Tomato paste
½ cloves, minced Garlic
¼ leaf Bay leaf
¼ medium whole Tomatoes
¾ tbsp Parsley
Directions
- 1
Rinse and drain the beans. In a large pot, combine the beans, chicken broth, and water; bring to a gentle simmer over medium heat.
- 2
In a large skillet over medium heat, cook the bacon until crisp, 8 to 10 minutes. Transfer to a paper towel–lined plate. Stir half of the bacon into the simmering soup, reserving the rest for garnish.
- 3
Pour off all but about 2 tablespoons of the bacon fat. Add the carrots, celery, and onion; season lightly with salt and pepper. Cook, stirring, until beginning to soften, 3 to 4 minutes. Stir in the tomato paste and garlic and cook 1 minute more.
- 4
Scrape the sautéed vegetables into the pot and add the bay leaves. Simmer gently, uncovered, stirring occasionally, until the vegetables are tender and flavors meld, 20 to 30 minutes; adjust salt and pepper to taste.
- 5
Stir in the diced tomatoes and cook until heated through, 2 to 3 minutes. Remove and discard the bay leaves.
- 6
Ladle into bowls and top with the reserved bacon and the chopped parsley just before serving.
