³⁄₁₆ lb Ground beef- 🥄¼ tsp Salt
¹⁄₁₆ cup, chopped Onion
³⁄₁₆ stalk, medium Celery
¹⁄₁₆ cup grated Carrots
⅔ cup Tomatoes
1 cup Beef broth
³⁄₁₆ leaf Bay leaf
⅔ tbsp Parmesan cheese
⅔ oz Whole wheat pasta
Directions
- 1
Warm a large pot or Dutch oven over medium-high heat. Add the ground beef and salt, breaking the meat into small crumbles, and cook until well browned, 10 to 12 minutes. Stir in the onion, celery, and carrots and cook until slightly softened, 3 to 4 minutes.
- 2
Pour in the canned tomatoes and beef broth, then add 1 to 2 bay leaves. Bring to a simmer, cover, and cook on low until the vegetables are tender and flavors meld, 60 to 90 minutes, adding a little water or broth if the liquid reduces too much. Remove and discard the bay leaves.

Stir in the pasta and simmer until al dente according to package time. Taste and adjust seasoning as needed. Ladle into bowls and top with Parmesan to serve.
