3 leaf, whole Basil
1 large Egg
2 slice (1 oz) Provolone cheese
1 slice Whole wheat bread
¼ medium Scallions
3 strip Bacon
½ tbsp Butter
¹⁄₁₆ cup Parmesan cheese
Directions
- 1
Grate the Parmesan cheese finely.
- 2
Cook the bacon in a large nonstick skillet over medium-high heat until crisp. Transfer to paper towels, reserving the skillet with drippings.
- 3
Melt the butter in an extra-large nonstick skillet over medium heat. Add 4 slices of bread and top each with 2 slices of provolone cheese. Sprinkle with black pepper and cook until the cheese melts, about 3 to 4 minutes.
- 4
Meanwhile, heat the reserved skillet with drippings over medium heat. Crack the eggs into the skillet and cook until the whites are set but the yolks are still runny, about 2 to 3 minutes.
- 5
Place 6 bacon slices and 2 eggs atop each of 2 cheese toasts. Top the eggs with scallions, Parmesan, and basil, then place the remaining bread slices on top, cheese side down. Cut the sandwiches in half and serve.
