¼ cup, sliced Plantain
4 oz Pork sausage
¼ large Egg white- 🥄¼ dash Salt
¼ dash Black pepper
⅛ tsp Garlic powder
¾ tbsp Butter
¼ cloves, minced Garlic
¼ fruit Avocado
¼ tbsp Honey
¼ tsp Dijon mustard
¼ tsp or 1 packet Yellow mustard
¼ cup Arugula
Directions
- 1
Preheat the oven to 375°F. Place dried plantain chips in a food processor and pulse until they reach a breadcrumb consistency.
- 2
Form 4 burger patties from the pork sausage.
- 3
Whisk the egg white in a bowl until bubbly. Place plantain breadcrumbs in another bowl. Dip each patty in the egg white, then coat with the plantain mixture. Season with salt, pepper, and garlic powder.
- 4
Heat a cast iron skillet over medium-high heat. Add butter and minced garlic.
- 5
Once the garlic is fragrant, add the burgers to the pan and sear for 3-4 minutes on each side, ensuring the plantain coating does not burn.
- 6
Transfer the burgers to the oven and cook for 8-10 minutes, or until they reach your desired doneness.
- 7
While the burgers finish cooking, whisk together honey and both mustards. Slice the avocado.
- 8
Let the burgers rest for 2 minutes. Top with avocado and honey mustard, and serve with arugula.
