⅛ cup Green peas
½ tbsp Olive oil
¼ leek Leeks
1 ½ extra large Egg- 🥄¼ tbsp Water
½ tbsp Spearmint- 🥄¼ dash Salt
¼ dash Black pepper
½ oz Ricotta cheese
Directions
- 1
Preheat oven to 425°F.

Blanch peas in boiling water for 3-4 minutes, then place immediately in an ice bath.
- 3
Slice leeks into thin strips. Tear mint leaves into small pieces.
- 4
Heat the oil in a large ovenproof sauté pan over medium heat. Add the leeks and sauté until soft, then add the peas and cook for 2 to 3 minutes more.

In a medium bowl, beat the eggs with water. Add the eggs and half the mint to the pan, season with the salt and pepper. Cook, lifting the edges with a spatula to allow the uncooked eggs to flow to the bottom.
