Directions

Prep 10 minCook 55 min
  1. 1

Heat the oven to 375° and lightly coat a 9×13-inch baking dish with cooking spray.

  2. 2

Trim and halve the zucchini lengthwise. Scoop out the centers to leave 1/4-inch shells. Finely chop about half of the scooped flesh for the filling; reserve the rest for another use.

  3. 3

Warm about two-thirds of the olive oil in a large skillet over medium-high heat. Add the onion and garlic; cook until softened, 2–3 minutes. Stir in the mushrooms and the chopped zucchini flesh and cook 2 minutes more.

  4. 4

In a separate skillet, heat the remaining olive oil over medium-high. Add the ground turkey and cook, breaking it up, until lightly browned, about 6 minutes.

  5. 5

Combine the turkey with the vegetable mixture. Stir in the white wine, tomatoes, basil, and rosemary; simmer about 1 minute. Remove from heat and drain off any excess liquid or fat. Let cool slightly.

  6. 6

Fold in the Parmesan, egg, salt, and pepper until evenly combined.

  7. 7

Arrange the zucchini shells in the baking dish and spoon in the filling, mounding slightly. Pour about 1/4 inch of water into the dish around the zucchini.

  8. 8

Bake until the zucchini are tender and the tops are golden, about 40 minutes. Let rest 5 minutes before serving.
