0.03 cup Coconut oil
¹⁄₁₆ cup Buttermilk
0.03 cup unpacked Brown sugar
¹⁄₁₆ large Egg
¹⁄₁₆ tsp Vanilla extract
¹⁄₁₆ cup All-purpose flour
¹⁄₁₆ cup Whole wheat flour- 🥄¹⁄₁₆ tsp Baking soda
¹⁄₁₆ tsp Baking powder- 🥄¹⁄₁₆ tsp Salt
¹⁄₁₆ tsp Allspice
⅛ cup, quartered or chopped Apple
³⁄₁₆ tbsp Butter
¼ tbsp Granulated sugar
¹⁄₁₆ tsp Cinnamon
Directions
- 1
Microwave or heat the coconut oil until it's liquified. Repeat the same process for the milk to bring it to room temperature. This prevents the coconut oil from clumping when mixed with cold milk.
- 2
Preheat the oven to 350°F. In a large bowl, whisk together the coconut oil, buttermilk, brown sugar, egg, and vanilla until smooth. Add the flours, baking soda, baking powder, salt, and allspice. Stir until just combined, then fold in the apples. Scoop the mixture into a greased or lined muffin tin.
- 3
Melt the butter for the topping, then mix with the sugar and cinnamon. Spoon over the tops of the muffins.
- 4
Bake for about 15 minutes or until a toothpick comes out clean. The muffins should be golden brown with big round tops that spring back when pressed.
