2 oz Whole wheat pasta
1 tsp Peanut butter
¾ tbsp Tamari soy sauce
½ tbsp Rice wine vinegar
1 tsp Canola oil
¼ tbsp Ginger root
¼ tbsp Honey
¼ tbsp Hot sauce
½ tbsp Lime juice
½ medium Scallions
1 cup, shredded Cabbage
¼ small Red bell pepper
¾ tbsp Peanuts
¾ tbsp Sesame seeds
Directions
- 1
Cook the pasta until al dente according to package directions. Drain, reserving some of the starchy pasta water, rinse, and set aside.
- 2
To make the peanut dressing, microwave the peanut butter in a large measuring cup for about 15 seconds to soften. Whisk in the soy sauce, vinegar, canola oil, ginger, honey, hot sauce, and lime juice. Thin with the reserved pasta water, 1 tablespoon at a time, until the dressing is thick but pourable.
- 3
Thinly slice the scallions, cabbage, and bell pepper. In a large mixing bowl, combine the pasta with the vegetables and toss with the dressing. Top with chopped peanuts and sesame seeds before serving.
