¼ cup Mayonnaise
¼ tbsp Sweet pickle relish
¼ tsp Parsley
¼ tsp, drained Capers
⅜ tbsp Lemon juice
¼ tsp Granulated sugar- 🥄¹⁄₁₆ tsp Salt
½ cup Breadcrumbs
4 oz Atlantic cod
1 roll Hamburger bun
1 slice (3/4 oz) American cheese
1 spray , about 1/3 second Cooking spray
¼ large Egg
¼ tbsp Mayonnaise
¼ tbsp Dijon mustard
¼ tbsp All-purpose flour
¼ dash Black pepper
Directions
- 1
Preheat the oven to 350° F. Line a rimmed baking sheet with foil or parchment for easy cleanup.
- 2
Make the tartar sauce: In a bowl, combine the mayonnaise (for sauce), pickle relish, parsley, capers, lemon juice, sugar, and salt. Stir and let stand at least 10 minutes.
- 3
Toast the breadcrumbs: Spread the breadcrumbs on a baking sheet, mist lightly with cooking spray, and bake 3–5 minutes, stirring once, until lightly golden. Transfer to a shallow bowl to cool.
- 4
Lightly coat the lined baking sheet with cooking spray.
- 5
Portion the cod into 4 pieces, each slightly larger than the buns.
- 6
Make the batter: In a bowl, whisk the egg, mayonnaise (for batter), Dijon mustard, flour, and black pepper until smooth.
- 7
Coat the fish: Dip each piece of cod in the batter, letting excess drip off, then press into the toasted breadcrumbs to adhere on all sides. Arrange on the prepared baking sheet.
- 8
Bake until the fish is opaque and flakes easily, 12–15 minutes. Immediately top each piece with a slice of cheese to melt slightly.
- 9
Split the buns and warm briefly in a toaster or microwave, if desired.
- 10
Assemble the sandwiches: Place a piece of fish on each bun, spoon on tartar sauce, and close to serve.
