- 🥄1 ½ cup Water
2 oz Shrimp
¼ leaf Bay leaf
¼ tsp Black peppercorns
¼ tbsp Orange peel
½ tbsp Olive oil- 🥄⅛ tsp Salt
¼ bulb Fennel bulb
¼ small Onion
¼ leek Leeks
1 cloves, minced Garlic
¾ cup Tomatoes
2 fl oz White wine
¼ tsp Thyme
¹⁄₁₆ tsp Marjoram
⅛ tsp Saffron
⅛ tsp Cayenne pepper
2 oz Atlantic salmon
2 oz Atlantic cod
2 oz Clams
2 oz Blue mussels
Directions
- 1
Peel the shrimp and reserve the shells. In a saucepan, combine the water, shrimp shells, bay leaf, peppercorns, and orange peel; simmer gently for 15 minutes, then strain and keep the stock warm.
- 2
Warm the olive oil in a heavy pot over medium heat. Add the onion, leek, fennel, and a pinch of salt; cook, stirring occasionally, until tender but not browned, about 15–20 minutes.
- 3
Stir in the garlic and cook until fragrant, 30–60 seconds. Add the tomatoes and wine; bring to a boil and reduce until the wine is about half its original volume.
- 4
Pour in the warm shrimp stock. Add the thyme, marjoram, saffron, and cayenne; simmer gently for 10 minutes to blend flavors.
- 5
While the broth simmers, scrub the clams and mussels under cold water and remove any beards from the mussels; discard any with cracked shells.
- 6
Add the salmon and cod to the simmering broth. After 2 minutes, add the mussels and clams; after 2 minutes more, add the shrimp.
- 7
Simmer just until the shrimp are opaque and the shellfish open, 2–3 minutes longer. Discard any shellfish that do not open and season the broth with more salt to taste.
- 8
Remove from heat and ladle into warm bowls. Garnish with chopped reserved fennel fronds and serve immediately.
