⅓ tbsp Butter
³⁄₁₆ large Onion
⅓ large Carrots- 🥄³⁄₁₆ tsp Salt
³⁄₁₆ tsp Black pepper
⅓ tbsp Tomato paste
2 ⅔ oz Ground beef
⅓ tbsp, leaves Thyme
³⁄₁₆ cup Beef stock
³⁄₁₆ tbsp Cornstarch- 🥄¹⁄₁₆ cup Water
³⁄₁₆ cup Green peas
³⁄₁₆ potato, large Potato
Directions
- 1
Preheat the oven to 400°F and position a rack in the middle.
- 2
Melt half of the butter in a large skillet over medium-high heat. Add the chopped onions and carrots, and sauté, stirring occasionally, until the onions are soft, about 5 to 6 minutes. Season with salt and pepper, then stir in the tomato paste.
- 3
Add the ground beef to the skillet and cook, breaking it up with a wooden spoon, until browned, about 5-10 minutes. Add the thyme and beef stock, and bring to a boil. Cook, stirring constantly, until the mixture starts to reduce, about 3 minutes.
- 4
In a bowl, mix the cornstarch with cold water. Add this mixture to the beef and cook until it thickens, about 2 minutes. Stir in the peas and adjust the seasoning to taste if needed.
- 5
Transfer the beef mixture to a 2-quart baking dish. Top with overlapping slices of potato. Melt the remaining butter and drizzle it over the potatoes.
- 6
Bake until the potatoes are browned around the edges, about 40 to 45 minutes. Let cool for 10 minutes before serving.
