¼ cup Lentils- 🥄¾ cup Water
¼ tbsp Canola oil
⅛ tsp, whole Cumin seed- 🥄¼ stick Cinnamon sticks
¼ cup, chopped Onion
¼ pepper Green chili pepper
1 cloves, minced Garlic
¼ tbsp Ginger root
⅛ tsp Turmeric
⅛ tsp, ground Cardamom
⅛ tsp Paprika- 🥄³⁄₁₆ tsp Salt
¼ medium whole Tomatoes
⅛ lemon yields Lemon juice
1 tbsp Cilantro
Directions
- 1
Rinse the red lentils under cool water until it runs mostly clear, then combine with the water in a medium saucepan. Bring to a gentle simmer over medium heat and cook until tender and beginning to break down, 15 to 20 minutes, skimming any foam.
- 2
Meanwhile, warm the oil in a skillet over medium heat. Add the cumin seeds and the cinnamon stick and cook, stirring, until fragrant and sizzling, about 60 to 90 seconds.
- 3
Stir in the onion, minced chili, garlic, and ginger. Cook, stirring occasionally, until the onion is translucent and lightly softened, 4 to 5 minutes.
- 4
Add the turmeric, cardamom, paprika, salt, and diced tomato. Cook until the tomato softens and the mixture is glossy and aromatic, 2 to 3 minutes. Remove and discard the cinnamon stick.
- 5
When the lentils are tender, stir in the spiced onion mixture and lemon juice. If needed, add a splash of hot water to loosen to a creamy, spoonable consistency; adjust salt to taste.
- 6
Transfer to bowls and garnish with the chopped cilantro.
