⅝ large Egg
⅝ strip Bacon
¼ tbsp Butter- 🥄¹⁄₁₆ cup Almond flour
½ tbsp, ground Flaxseed- 🥄³⁄₁₆ level tbsp Psyllium Husk Powder
¼ fruit Avocado
⁹⁄₁₆ oz Cheddar cheese
⅜ medium Scallions
⅛ cloves, minced Garlic
⅛ tsp chopped Chives- 🥄¹⁄₁₆ tsp Crushed red pepper flakes
- 🥄⅛ dash Salt
⅛ dash Black pepper
³⁄₁₆ cup Coconut milk
³⁄₁₆ tbsp Lemon juice
⅛ tsp Baking powder
Directions
- 1
Preheat the oven to 350°F. Grease or spray a muffin tin.
- 2
In a large bowl, whisk the eggs, almond flour, ground flaxseed, psyllium husk powder, salt, black pepper, crushed red pepper flakes, coconut milk, and lemon juice until smooth. Let stand 5–10 minutes to hydrate while you cook the bacon.
- 3
Cook the bacon in a skillet over medium-low heat until crisp. When nearly done, add the butter and melt. Transfer bacon to a board and roughly crumble, reserving the rendered fat and butter.
- 4
Stir the scallions, garlic, chives, cheddar, and baking powder into the hydrated batter.
- 5
Fold in the crumbled bacon along with 1–2 tablespoons of the reserved bacon fat/butter mixture to flavor the batter.
- 6
Halve, pit, and cube the avocados in their skins, then gently fold the cubes into the batter to keep pieces intact.
- 7
Divide the batter evenly among muffin cups, filling each about 3/4 full. Bake 22-27 minutes, until set in the center and lightly golden. Cool in the pan 5 minutes, then transfer to a rack.
