¼ tbsp Butter
¼ cup, sliced Onion
¼ tsp packed Brown sugar- 🥄¼ tsp Salt
¼ tsp Black pepper
2 fl oz Beer
¼ tbsp Dijon mustard
4 oz Bison
½ cloves, minced Garlic
¼ tbsp Tomato paste
½ tsp Worcestershire sauce
¼ tsp Paprika
1 roll Hamburger bun
1 tbsp Barbecue sauce
⅛ cup, halves Sweet red peppers
½ cup Spinach
Directions
- 1
Warm a large skillet over medium heat and melt the butter. Add the sliced and cook, stirring occasionally, until starting to soften, about 5 minutes.
- 2
Sprinkle in the brown sugar and a couple pinches each of salt and pepper. Reduce heat to medium-low, cover, and cook, stirring occasionally, until deeply golden, about 15 minutes.
- 3
Pour in half of the beer, increase heat to medium, and cook until nearly evaporated. Stir in the Dijon mustard and set the onions aside.
- 4
Preheat the grill to medium-high. In a large bowl, gently combine the bison, remaining beer, minced garlic, tomato paste, Worcestershire sauce, paprika, and a pinch each of salt and pepper. Form into equal patties, handling the meat as little as possible.
- 5
Grill the patties until cooked through to your liking, about 5 minutes per side, adjusting as needed based on thickness. Lightly toast the buns on the grill during the last minute.
- 6
Place patties on toasted buns and top with barbecue sauce, the beer-caramelized onions, roasted red peppers, and spinach. Serve immediately.
